Cidre Revolution Farm-Package
In the beginning of 2023, Klaus and I first met. He is an organic cow-farmer on his own farm called Herbighof, who makes all kind of milk-products. I was in need of whey to spray on my vines for natural protection and he helped me out. During 2023 we stayed in contact and started to get the idea to use the old apple and pear varieties that grow on the meadows next to his farm.
Cidre, or the so-called „Ebbelwoi“ has a very rich tradition in the region around Klaus farm.
On the smooth, gorgeous hills in the Odenwald you can find a lot of different old, nearly forgotten apple and pear varities, that makes the best terroirdriven Cidre and Poiré!
When Klaus and I walked through his meadows, I was fascinated by the different tastes of all those amazing fruits. So it was a clear thing to start the new natural cidre revolution!
In the beginning of September we started to harvest the first apples and reactivate the old, traditional basket press that was first used in the early 30s.
We harvested everything by hand to make the best quality cidre and pressed the apples over two days.
More harvest days continued until beginning of November.
All bottles are bottled traditional as Pétillant-Naturel. So we didn‘t add anything, no sulfite, no nothing! We just bottle before the end of fermentation to get a nice perlage that gives the cidres an easy drinkability and reminds more like a sparkling wine than an applewine.
All Cidres and Poirés are very terroir driven, really mineralic and complex while easy drinking. We love to enjoy them to some nice cheese and bread, but they also works perfect as aperitiv.
